Luna’s Waffles to re-launch as Frisbie’s Dairy Barn


Ice cream in February?

While not the usual time of the year to be getting a triple scoop, a soon-to-open business is hoping the residents of North Attleborough will make an exception.

Luna’s Waffles, which opened in 2020, will soon become the new location for Frisbie’s Dairy Barn. Headquartered in Connecticut, the family-owned business already has three locations in the state and recently made the move to open one in Massachusetts and another in Providence, R.I. A sixth location is planned in Sturbridge in the new Noble Market, according to the company web site.

Paul Parks III, who’s a partner in the business with his father and runs the Connecticut locations, said the owners of Luna’s are family friends. When they moved on, Parks said the choice was made to step in.

“They did well and enjoyed it, but were looking to sell and so we purchased the company from them,” he said.

Eventually, the decision was made to briefly close the site and re-open as Frisbie’s. Kendra Walker will be the manager of the site and Paul’s sister Victoria will handle the social media and training and hiring of new staff. Those currently employed by Luna’s will remain on staff, and the expectation is that more hires will take place in the summer months.

The North Attleborough site will open Feb. 11, and the one in Providence—located at 65 Waybosset St. in the Arcade building in the city’s downtown area—will likely begin operations on Feb. 4. Paul cited the local connection as a positive aspect, since all three grew up in Cumberland and stayed in the area for college.

‘We all have those close ties,” Walker said. “Being able to tie that together with the business and approach the business the same way, it’s nice to have that overlap.”

Paul said some of the flavors which will be available at the store include Blue Devil Cookie Monster, a raspberry cheesecake, and a new type with Nutella and chocolate chips. There’s also the Plainville Peanut Butter, Grant’s Grapenut, and Litchfield Lemon Ice. There will also be vegan flavors, such as Pina Coolata. Paul said that all the ice cream is made on site, and the company catchphrase is “Eat ice cream, be happy.”

Much like Luna’s, waffles will also be on the menu—specifically bubble waffles, a light, airy variety that Walker said originated as a street food in Hong Kong and has found great popularity in the U.S. They’re described as being crispy on the outside and fluffy on the inside. Paul said these waffles will be staples of the North Attleborough and Providence locations.

“The main thing that’s allowed us to grow is the support of the community,” he said. “We work hard to provide the best possible ice cream and we hope it all falls into place.”
